Classic Turkey Soup

Ingredients:

- Carcass of one turkey (1.5 pounds)
- 8 cups low sodium chicken broth
- 1 head garlic
- 2 bay leaves
- 2.5 cups of diced turkey
- ½ pound of green beans (cut into 1-inch pieces)
- 2 cups corn kernels
- 2 large potatoes, peeled and diced
- 1 cup of desired dry pasta
- ½ teaspoon pepper
- Salt

Directions:

1. Place turkey carcass, broth and garlic in a large Dutch oven and add enough water to cover by an inch.

2. Bring to boil over medium-high heat. Lower heat and simmer, uncovered, about 40 minutes. Strain the soup through a fine-mesh strainer into a larger bowl; discards solids.

3. Add all but 2 cups of broth back into the Dutch oven and reserve the remaining for another step.

4. Add turkey meat, green beans, corn and potatoes to the pot, cover and cook over medium heat for 15 mins. Add pasta and continue to cook, uncovered for 10-12 mins.


Fried Stuffing Bites

Ingredients:

- Leftover Stuffing
- 2 eggs
- 2 teaspoon milk
- 1 cup breadcrumbs
- 1 cup cranberry sauce
- ½ teaspoon pepper
- ½ cup walnuts or pecans
- Oil to fry



Directions:

1. Preheat oven to 350 F.

2. Cut leftover stuffing into small cubes.

3. In a small bowl, whisk eggs and milk together. Coat each stuffing cube with this mixture and roll in breadcrumbs.

4. In a food processor, blend cranberry sauce, pepper and nuts.

5. Once oil is at temperature, fry each stuffing piece until brown (about 3-5 mins).


Turkey Waldorf Salad

Ingredients

- 2 cups of leftover pulled turkey meat
- 2 stalks of celery (diced)
- 1 apple
- 1 cup red seedless grapes (halved)
- ½ cup pecans, toasted and coarsely chopped
- ½ cup non-fat yogurt
- 2 tablespoons mayonnaise
- 1 teaspoon honey
- ¼ teaspoon salt
- Pepper



Directions:

1. In a large bowl, toss the turkey, celery, apple, grapes and pecans until combined.
2. In a smaller bowl, whisk together yogurt, mayonnaise, honey and ¼ teaspoon of salt until well combined.
3. Add dressing to the turkey mixture, season with salt and pepper and toss to evenly dress the salad.
